In the saltworks of L'Ile d'Olonne, find us, Quentin, Julien and Yohan, all three farmers on our salt marshes located at the foot of the picturesque village of L'Ile d'Olonne. We harvest our salt there in the traditional way using the same working techniques unchanged for centuries. The saltworks of L'Ile d'Olonne have existed for more than 1000 years. Our passion is to restore them while preserving their original structure. Our objective is to carry out the rehabilitation of old saltworks which were abandoned more than 50 years ago in order to highlight this unique ancestral heritage which made the history of L'Ile d'Olonne (formerly 4000 saltworks on 140 saltworks).

Managing the tides, careful preparation of the salt marshes on the beaten clay bottoms, accompanied by a good wind and strong sunshine are the secrets that ensure the summer harvest of a 100% natural product.
